I was thrilled to move into my new house this winter and I’ve been working so hard to prepare for my classes and to welcoming people from all over the world just like I had done in the previous years.
Then the pandemic hit. I had to refund my all my bookings and my business dropped down to 0. Simultaneously, many of you sent me messages telling me that they couldn’t wait to come here and that hopefully my classes would still happen next year.
I decided to make lemonade out of lemons! I am presenting my kitchen to the virtual world with a series of online cooking classes via Zoom. What a great way to be together in Provence and also a wonderful way for you to feast together with your loved ones.
My way of cooking has two fundamentals: choosing the best ingredients and prepare them in a way that respects and highlights their flavors. I can describe what I do as simple cooking, but not simplistic. There are techniques that I discovered and practiced for many years that will bring your dishes to the next level–without being overly fussy or complicated.
I will offer courses on a specific subject or ingredient. For example, one class will be all about zucchini, or tomatoes, chicken and so on. You will learn how to bring out the choose, store and bring out the best in each ingredient. We’ll cook the same ingredient in different ways, so instead of a simple recipe, I will encourage you to approach food with an open your mind and creativity so you cook with ease and flair. Many essential recipes are included in my courses, like making a béchamel or preparing clarified butter.
On Sundays, I will offer a particularly special class, The Sunday Lunch. We’ll cook the main dish, along with two sides and a dessert. Or we’ll make pasta. This will be done so so that afterwards, you can invite your family or group of friends to join you for a festive day.
