When I set to create this Series, my collaborator asked me to describe the essence of my menus in three words, and these are the ones I picked!

Art - Crafting a menu is a fully artistic and sensorial experience for me, almost like composing a song.

Nature - I always prefer seasonal ingredients, even better if they've been grown locally.

Fun - A good dinner is meant to be enjoyable, not sleep-inducing! I keep the amounts of carbs and grains limited to help you avoid the dreaded slump.
